Chef Jon Gibson of The Beachcomber Café will be delighting us again on Sunday, September 19th at 1:30 pm with his Co-Coa Crusted Pork Belly Braised in Guinness.
We are pleased to welcome back, Chef Jon Gibson, of The Beachcomber Café in Newport Beach. Chef Gibson’s humble beginnings started by “flippin’ burgers” at the local Hardee’s restaurant and then filling every role of the restaurant industry from head bartender, food and beverage director, and even restaurant general manager. A trip to Sicily, led to self discovery of his culinary passion and paved the way for achieving honors at Le Cordon Bleu. He has since, worked along side the likes of Cat Cora, Guy Fieri, and Michelin Chef Edouard Loubet.
Chef Jon’s southern culture, extensive travel across the U.S. and Europe, classic French culinary training and access to the best local California ingredients have added a new dimension and twist on comfort food and Californian cuisine. His “coastal comfort cuisine” style menus change every six months to reflect the use of fresh seasonal ingredients. When Chef Jon is not at work or playing “mad scientist Chef” at home, you can usually find him, riding his motorcycle, knee deep in the surf fishing, or roaming around local farmers markets.
The Beachcomber at Crystal Cove opened in August of 2006 and is located in the heart of the Crystal Cove State Park Historic District. The Restaurant is one of the original historic cottages built in the 1930′s. It has been renovated to reflect the “heyday” of Crystal Cove in the 1940′s and 1950′s. The restaurant is surrounded by historic cottages that are available for overnight rental through the State Park system and offers a variety of outdoor activites such as tidepool explorations, swimming, sunbathing and beach activities to accompany your perfect day at The Beachcomber Cafe!

A global top chef added to the “Chef’s Cooking Pavilion” at the Taste of Newport.
While celeb Chef Grant MacPherson is a newbie to Newport, he is certainly not new to cooking. A native of Scotland, this global chef has tremendous international experience, having worked on five continents and winning the gold at the 1992 culinary Olympics in Frankfurt. He has cooked for heads of state and the “gourmet royalty” in the likes of Margaret Thatcher, George H. W. Bush, Princess Diana, Nelson Mandela, Jimmy Stewart, Morgan Freeman, Julia Roberts and Robert Mondavi and has cooked numerous times at the James Beard House in New York.
Chef MacPherson has worked in such prestigious hotel kitchens as The Regent, The Ritz-Carlton, The Four Seasons, Malaysia’s Datai Hotel and Raffles Hotel in Singapore before being recruited by Steve Wynn in 1998 to head culinary operations at the Bellagio in Las Vegas. After 10 years in the Steve Wynn organization and a spectacular career in the hotel and entertainment hospitality field, Chef MacPherson made the decision to leave the Casino industry and now calls Newport Beach home delighting our taste buds with his new restaurant at Fashion Island; Rustica. Join us 6:30 pm Friday, September 17th at the Chef’s Cooking Pavilion at the Taste of Newport to learn from a true pro and taste his amazing Tuna Nicoise.
We first wrote about Rustica a couple weeks ago when our ears were buzzing about this tasty new new eatery. Chef Grant MacPherson opened Rustica in Fashion Island in June 2010. Chef Grant’s wealth of worldwide experience brings modern Italian cooking techniques with a blend of seasonal California products. The casual dining location has a patio overlooking a spectacular water fountain located next to Nordstrom’s Department Store. The menu consists of wood burning flatbreads, hand crafted pastas, seasonal fish, wet aged beef and exceptional daily turned gelato’s.
